This Fresh Mango Guacamole is a delicious take on the original guacamole. It has the sweetness of ripe mangoes and the creaminess of avocados. The perfect mix of tastes for a snack or side dish that is both cool and filling.
Ingredients: 2 ripe avocados. 1 ripe mango, diced. 1/2 red onion, finely chopped. 1 jalapeo pepper, seeded and minced. 2 cloves garlic, minced. Juice of 2 limes. 1/4 cup fresh cilantro, chopped. Salt and pepper to taste.
Instructions: Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocados with a fork, leaving some chunks for texture. Add the diced mango, finely chopped red onion, minced jalapeo pepper, and minced garlic to the bowl with the mashed avocados. Squeeze the juice of 2 limes over the mixture and stir to combine. Fold in the chopped cilantro and season with salt and pepper to taste. Serve immediately with tortilla chips or as a topping for tacos, grilled chicken, or fish.
