Ingredients: 2 ripe mangoes, peeled and diced. 1 cup shredded coconut. 2 cups baby spinach. 1/4 cup chopped fresh cilantro. 1/4 cup chopped red onion. 1 avocado, diced. Juice of 1 lime. 2 tablespoons extra virgin olive oil. Salt and pepper to taste.
Instructions: In a large bowl, combine diced mangoes, shredded coconut, baby spinach, chopped cilantro, chopped red onion, and diced avocado. Drizzle with lime juice and olive oil, and toss gently to coat all ingredients. Season with salt and pepper to taste. Serve immediately or refrigerate until ready to serve.
