Today is her day! Cannot believe you are 1 year old!!! You grow so much, from a little cute kitten to a full size little demon that I love so much! Hey Cozylings 🥰✨ Okay but can we talk about how I haven't shared a proper dessert recipe in what feels like forever? 😭🥭🍰 Between all the smoothies, pregnancy cravings, cozy life updates, love story posts, and everything else happening lately, I didn't realize how much I missed spending an afternoon in the kitchen baking something sweet just for the joy of it. And honestly? This cake happened because I could not stop thinking about mangoes. 😂☀️🥭 Lately it feels like every time I open the fridge, walk through a grocery store, or start thinking about what I want to make next, mango somehow ends up involved. Maybe it's because summer is right around the corner. Maybe it's because California already feels like summer most days. Maybe it's pregnancy cravings. Maybe it's all three. Whatever the reason, the mango cravings won this round. 😭🤍 The moment I started imagining a mango version of tres leches cake, I knew I had to try it. Soft vanilla sponge. Creamy mango milk. Fluffy clouds of whipped cream. Fresh juicy mango on top. It sounded like sunshine in dessert form and thankfully it tasted exactly like I hoped it would. ☀️🍰✨ What I love most about recipes like this is that they remind me why I started sharing recipes in the first place. Not because everything has to be perfect. Not because every recipe needs expensive ingredients. Not because every dessert needs to look bakery-level professional. But because there is something really special about making something with your own hands, sharing it with people you love, and creating little memories around food. Some of my favorite memories growing up happened around kitchen tables, family gatherings, birthday cakes, holiday desserts, and random afternoons when someone decided to bake something simply because they felt like it. Those moments stay with you. And I think that's why I love cozy recipes so much. 🤍☕ Food has a way of slowing us down for a little while. It gives us a reason to gather. A reason to celebrate. A reason to call someone into the kitchen and say, "You have to try this." And lately, with life moving so quickly, I've been appreciating those little moments even more. Especially now. Especially during this season of life.
