Today was my lucky day. I drove into Burton to run an errand, and ended up at the log cabin where they make call of the maple syrup and maple sugar candy. The maple cream was being made as I stood there...fresh maple syrup heated to just the right temperature and stirred into a soft and creamy mass of maple goodness. I bought two boxes, stick a spoon into it and the maple cream was still warm. I’d forgotten just how good it was when it was just made and I proceeded to eat half the box myself before exhibiting some restraint. 🍁This is slow food, and although the syrup is made in midwinter, maple cream still remains one of my favorite tastes of Autumn , especially when it has black walnuts stirred into it. You can make your own maple cream or maple butter as it’s affectionately called very easily, by heating maple syrup to about 235 degrees and stirring it gently and very consistently over a bath of ice. There are plenty of recipes for this online and I suggest doing this at least once with a child that you want to enchant. Or you can do as I did and go buy it at the Log Cabin in Burton Ohio, but you really should experience it this fresh and warm at least once. Serve it with scones and freshly whipped butter or clotted cream for a seasonal treat or eat it as I did, with just a spoon.
