This is no joke it's so easy, fast & absolutely full of flavor. If you have tried my recent chocolate cake recipe you will definitely want to try this one out. Perfect for any occasion even Christmas :)
his cake is spongy, soft and flavorful from the yogurt that I used in this recipe and you really do not want to skip the yogurt. :) Enjoy
Vanilla Cake: Serving 4-6
160 g ( 1 cup + 2 tbsp) Plain flour
90 g (1/2 cup) Sugar
85 g ( 3/8 cups or 3/4 Stick ) Softened Butter
65 g (1/4 cup) room temp Yogurt (Plain yogurt)
180 g (3/4 cup) room temp Milk
2 tsp Baking Powder
1 tsp Vanilla
1/4 teaspoon salt
Buttercream frosting:
150 gm butter/Margarine ( 2/3 cups)
150 gm powdered Sugar/Icing Sugar (1 1/2 cups)
1 teaspoon vanilla sugar
2 tablespoon milk
Method:
In a bowl, add butter and sugar and whisk until smooth. Add Yogurt and combine well. Add all dry ingredients (flour, salt, baking powder, vanilla sugar) and mix well until smooth.
Transfer to a microwave safe bowl and bake for 5-8 mins . I baked mine for approx (6 mins) this cake should not take any longer than 8 mins.
Do note that this cake will rise so please use a container that is suitable for the cake.
For the frosting:
-In a bowl, add in butter and beat for 2-3 mins. -Add in powdered sugar in 3 batches and vanilla sugar ( 3 parts) and beat 1 min for each part.
- Lastly, add in milk and beat for another minute. Texture should be smooth and easy to spread on the cake. Enjoy :)
