Continuing the business of importing all my and @petermorwood's food writing into one place, so there's no need to headclutch and try to figure out "where is it???" when someone asks for a specific recipe. Because life is, specifically, too damn short.
Right now I'm in the middle of pulling in the "French Toast As Served On Five Railways" recipes. Here's today's one... (There are two before it, and will [surprise!] be two more afterwards.) :)
A classy (if slightly finicky) take on French toast: tiny sweet sandwiches cut up and fried
Basic and substantial French toast from the dining cars of the railroad that served the Omaha stockyards
Over at the Mind Palate site: As we kick this terrible, awful, no-good, very bad January out the door, here's some French Toast, Union Pacific Style! CONTAINS LARD and doesn't care who knows it. (Though you can always omit that if you like.)
Is this the Scots version of the croissant? Could be. Crunchy, flaky, with a unique and slightly combative history...

Rich, moist, dark chocolate. With added Toblerone, and frosting that's halfway to fudge. What else do you need?

It's World Pulses Day, and someone's been in the kitchen. (And the scents floating out of there are incredible. I'd be gorging myself on the lentils if my IBS would let me. But at least I can have a little...)
