Mini bagel #2
I revisited this recipe https://somewhatdelicious.tumblr.com/post/659235187022053376/mini-mini-mini-bagels the other day, and since I was fresh out of tapioca starch I made some changes:
Mix together: 3.5 dl potato starch 0.6 dl coconut flour 1 tbsp psyllium husk Mix together and put to the boil: 2.5 dl coconut milk 5 dl water 100 gr butter Salt to taste Put the pan to the side, and add the dry ingredients, stir until forming a ball. Transfer to a mixer with a paddle, and run for a few minutes.
If you have a pot that isn’t non-stick you can also use a handheld mixer and just mix everything right in the pan.
Add one at a time while mixing: 4 eggs Run until smooth.
Fill a piping bag and pipe onto a silicon mat, baking paper or greased pan. I tried using a silicone mold and silicone baking paper, and both worked just fine. The best result came when I used a silicone mini doughnut mold, but I also tried piping against the inner rims of silicone muffin tins, and that worked out really well also.
Brush gently with egg wash (optional) and sprinkle your topping of choice. I myself are partial for sesame seeds, but are also known for enjoying the occasional poppy seed, and this time I made a quick everything bagel seasoning also. Bake at 200C until puffed up, then lower heat and bake until baked through.
