One Pot Pizza Pasta Bake
Now neither pasta or pizza are the healthiest of meals. But this recipe sure is yummy. We tried it as a family last week and while my daughter wasn’t too happy about the spicy sausage (she picked around it) she did enjoy the rest. And the best part, only 1 dirty pot to wash after dinner instead of 3-4 :)
P.S. Make sure you are using an oven safe skillet!
Ingredients: 1 Tbsp olive oil 8 oz. rotini pasta 8 oz. spicy italian sausage (I used ground sausage) 1 (15 oz.) can of tomato sauce 1/2 cup mini pepperoni, divided (my favorite part) 1/2 Tsp oregano 1/2 Tsp basil 1/4 Tsp garlic powder 1 cup shredded mozzarella Salt & Pepper to taste
Preparation: 1. Preheat the oven to broil.
2. Heat olive oil in your large oven-proof skillet over medium high heat. Add your italian sausage and cook until it is browned and be sure to crumble the sausage as it cooks.
3. Drain off any excess fat, then stir in 1/4 of mini pepperoni and heat through for about 1 minute.
4. Stir in your tomato sauce, basil, oregano, garlic powder, pasta and 1 1/2 cups of water. Season with salt & pepper to taste if you desire. Bring it all to a boil; cover, reduce heat and simmer until pasta is cooked through around 12 to 14 minutes.
5. Remove from heat and top with mozzarella and remaining pepperoni. Place into the oven and cook until melted and golden brown, about 2 minutes.
Serve immediately and if you want it to look more pretty you can garnish with fresh parsley.
