Can a witch practice only parts of a few types of witch craft? For example, a witch who practices a few of the characteristics of Hellenic and a few from Pop Culture (and perhaps a few things here and there from other types)
Yes, a character who chooses to do so might refer to their practice as “eclectic witchcraft.”
A character whose practice is interwoven with religion– like Hellenic witchcraft, for example– may be less like to be an eclectic witch, however, and will likely put great thought into how to best merge practices in such a way that properly honors their deities.

It’s also possible the character may keep them totally separated. As Mod T pointed out if the character wants to integrate their craft into one whole practice they would have to figure out how these separate pieces relate to one another without stepping on any toes.
If they were to keep them wholly separate, however, that’s a different story. This could be done by the character keeping a very tight separation on what aspects of their practice has anything to do with the higher powers they interact with, or by the popcraft portion of their work only being used in ways that the character can’t really use their connection to the Theoí.
Keep in mind that depending on which version/aspect of the Theoíyou decide to use in your story they could be more classical in that they can be very jealous and territorial or they can be very modern in that they don’t mind.
