My breakfast bowl! What's in it? Oats porridge (4 spoons of oats cooked in 250 ml milk in medium flame for 7 to 8 minutes) Generous drizzle of honey Nendhala pazham (A type of banana that's famous in Kerala, perceived as healthier than normal one) Almonds and cashews soaked overnight and chopped. On top of that, I also had couple of boiled eggs and that is how my morning was sorted. What I cooked today? I don't know what I cooked today, I'd call it 'simple pepper chicken fry'. Here is the recipe Add a teaspoon each of Ghee, coconut oil and sesame oil When the oil is very hot, add 300 gms of chicken (cut into small pieces with bone) into the hot oil Saute for few minutes until chicken is slightly browned, add coriander leaves and gree chilly and a table spoon of Ginger Garlic paste and salt. Saute for few minutes Now add couple of pinches of cinnamon and cardomom powder, quarter teaspoon of turmeric powder, a teaspoon of coriander powder, half teaspoon of jeera powder, pepper powder as per your spices level. Now saute in high heat for 3 to 4 minutes, sprinkle some water if you feel that chicken may stick to the bottom. I wanted to make fry, so added little water and cooked in medium flame for 7 whistles . You may think 7 whistles? Yes 7 whistles in medium flame makes it really tender and almost get you 'meat falling off the bone' consistency. You can add more water to make a gravy and and even more to make a soup. Adjust the amount of spices based on quantity of water you gonna use. Do try and let me know how it was.
