Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/4 cup unsalted butter, melted. 1/2 cup buttermilk. 1 egg. 2 tbsp fresh lime juice. 1 tbsp lime zest. 1 tbsp fresh mint leaves, finely chopped. 1/2 tsp vanilla extract. For the Glaze:. 1 cup powdered sugar. 2 tbsp fresh lime juice. 1 tbsp rum optional. Additional lime zest and mint leaves for garnish.
Instructions: Grease a donut pan and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius. Mix the flour, sugar, baking soda, baking powder, and salt in a mixing bowl. Melted butter, buttermilk, egg, lime juice, lime zest, mint leaves, and vanilla extract should all be combined in a different bowl. Stir the dry ingredients until they are well combined after adding the wet mixture. Pour the batter into each donut mold, filling it to about two thirds of the way. When a toothpick is inserted, bake for 10 to 12 minutes, or until it comes out clean. As the donuts bake, make the glaze by combining the rum if using, lime juice, and powdered sugar. After baking, the donuts should cool in the pan for a few minutes before being moved to a wire rack. Reposition the donuts on the wire rack after dipping each one in the glaze and letting any excess drip off. While the glaze is still wet, garnish with more lime zest and mint leaves.
