Woke up this morning feeling like trash, think I have a cold coming, and didn’t get any sleep because I had nightmares about work colleagues dropping dead at my feet with no way to help them (something that actually almost happened to me yesterday.....he is fine....thankfully I work in a hospital, no end of help within reach)
so, comfort food.
My landlady got a Morphy Richards soup maker for her birthday so I made myself a carb heavy, calorie filled soup.
4 carrots, one swede, one parsnip, one onion, 250ml soya cream, 2 vegetable stock cubes and 400ml of cold water. Straight in to the machine, set it to smooth and waited 21 minutes, just a twist of sea salt added to the bowl after cooking.....thickest of thick soups accompanied by chilli and garlic croutons (sadly I don’t make these, store bought)
Made enough to serve 4 adults.....or me for 4 days.
And I just realised I have everything I need to make cinnamon sticky buns.....back to the kitchen
