Ingredients: 2 lbs carrots, peeled and trimmed. 2 tablespoons ghee clarified butter. 2 tablespoons pure maple syrup. 1 tablespoon fresh sage leaves, chopped. Salt and pepper to taste.
Instructions: Preheat your oven to 400F 200C. In a large oven-safe skillet, melt the ghee over medium-high heat. Add the peeled and trimmed carrots to the skillet and toss them to coat in the melted ghee. Sprinkle the chopped sage leaves over the carrots and continue to cook for 2-3 minutes, allowing the carrots to brown slightly. Drizzle the pure maple syrup over the carrots and season with salt and pepper. Stir to combine.
