A tasty and comforting Asian-style soup with soft shrimp, rice noodles, and a fragrant broth made with ginger, garlic, and soy sauce.
Ingredients: 200g shrimp, peeled and deveined. 150g rice noodles. 4 cups chicken or seafood broth. 2 cloves garlic, minced. 1 inch ginger, grated. 2 tablespoons soy sauce. 1 tablespoon fish sauce. 1 tablespoon lime juice. 1 teaspoon sesame oil. 1 cup sliced shiitake mushrooms. 2 green onions, chopped. 1 red chili, sliced optional. Handful of fresh cilantro leaves, for garnish. Salt and pepper to taste.
Instructions: Cook rice noodles according to package instructions, then drain and set aside. In a pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, cook for 1-2 minutes until fragrant. Add chicken or seafood broth to the pot and bring to a simmer. Stir in soy sauce, fish sauce, and lime juice. Add sliced mushrooms and cook for 2-3 minutes. Add shrimp to the pot and cook until they turn pink, about 2-3 minutes. Season with salt and pepper to taste. Divide cooked noodles among serving bowls. Ladle the hot soup over the noodles. Garnish with chopped green onions, sliced chili if using, and fresh cilantro leaves. Serve hot and enjoy!
