Overnight Chocolate Chia Seed Pudding
Cauliflower Tabouli is a zesty, gluten-free, and vegan side dish that's a healthy twist on the classic tabouli salad. It's packed with fresh herbs, vegetables, and a tangy dressing that makes it a refreshing and nutritious addition to any meal.
Ingredients: 1 small cauliflower, finely chopped. 2 cups fresh parsley, finely chopped. 1/2 cup fresh mint leaves, finely chopped. 2 tomatoes, diced. 1/2 red onion, finely chopped. 1/4 cup olive oil. 3 tablespoons lemon juice. Salt and pepper to taste.
Instructions: Pulse the cauliflower in a food processor until it looks and feels like rice. Move the "rice" made from cauliflower to a large bowl. Dice the tomatoes and red onion and add them to the bowl with the cauliflower. Also add the chopped parsley and mint. To make the dressing, mix the olive oil and lemon juice in a separate small bowl. Pour the dressing over the salad, then toss everything together until it's well mixed. Add salt and pepper to taste to the tabouli. Put the cauliflower tabouli in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Enjoy it cold!

Brown Rice & Quinoa Chicken Tortilla Soup
Red lentils, aromatic spices, and vegetables are used to make this healthy and comforting soup. This hearty soup is great for a cold night, and it's full of flavor and protein.
Ingredients: 1 cup red lentils. 1 onion, chopped. 2 carrots, diced. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground turmeric. 4 cups vegetable broth. 1 tablespoon olive oil. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in garlic, onions, and carrots. For about 5 minutes, or until softened, saut. Add the turmeric and cumin and stir them in. Cook for one more minute. Put in the lentils and vegetable broth. Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the lentils are soft. Blend the soup until it's smooth with an immersion blender. You could also put the soup in a blender and blend it in batches until it is smooth. Add pepper and salt to taste. Serve hot with fresh cilantro on top. Have fun!

Ingredients: 1 cup cooked quinoa. 1/2 cup hummus. 2 medium zucchinis, sliced thinly lengthwise. 1/2 red bell pepper, thinly sliced. 1/2 cucumber, thinly sliced. 1/4 cup chopped fresh parsley. Salt and pepper to taste.
Instructions: Spread out the zucchini slices on a clean surface. Put a small amount of hummus on each zucchini slice. Spread the cooked quinoa out evenly on top of the hummus. On top of the quinoa, put some slices of red bell pepper to taste. Add salt and pepper, along with chopped parsley. Each zucchini slice should be rolled up tightly. If needed, use toothpicks to hold it in place. You can eat it right away or put it in the fridge until you're ready.
