These Old Bay Shrimp Stack Appetizers are a delightful combination of succulent grilled shrimp, sweet cherry tomatoes, and a zesty avocado salsa. Perfect for barbecue gatherings or as a flavorful appetizer for any occasion.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 tbsp olive oil. 2 tsp Old Bay seasoning. 1 cup cherry tomatoes, halved. 1 avocado, diced. 1/4 cup red onion, finely chopped. 2 tbsp fresh cilantro, chopped. 1 lime, juiced. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: Warm up the grill over medium-high heat. Toss the shrimp in a bowl with Old Bay seasoning and olive oil until they are well covered. Put shrimp and cherry tomatoes on soaked wooden skewers one after the other. Grill the skewers for two to three minutes on each side, or until the shrimp are opaque and fully cooked. Put the diced avocado, red onion, cilantro, lime juice, salt, and pepper in a different bowl. After the skewers are done cooking, carefully stack the shrimp and tomatoes on a serving plate. Add some avocado salsa to the top of each stack of shrimp. If you want, you can add more cilantro and lime wedges as a garnish. Serve your Old Bay Shrimp Stack Appetizers right away and enjoy them!
