"People equate chocolate from the South with fudge," says Scott Witherow, who decided to upend that stereotype by founding bean-to-bar chocolatier Olive & Sinclair. Witherow trained in England at Le Cordon Bleu, the Fat Duck and Nobu, before going home to Tennessee a few years ago. Now he stone-grinds cacao ("just like grits") and uses brown sugar rather than white: "It's so distinctly Southern and gives the chocolate rich molasses notes." Chocolate, anyone? Touted in FOOD & WINE magazine and on Gwyneth Paltrow’s website goop, Olive and Sinclair Chocolate puts a new twist on Southern cooking. Bourbon nib brittle. Smoked nib brittle. Buttermilk white chocolate. Owner and chocolatier Scott Witherow uses slow-roasted, stoneground cacao combined with brown sugar as the springboard for his unique creations.
We chose the perfect moment to stop by – Scott was handing out samples of an experimental batch of out-of-this-world delicious salted caramels. And there were more samples: amazing brittle like nothing you’ve ever tasted (you can really taste the bourbon and the smoked nibs) and cinnamon-chili chocolate with a wonderful kick to it.
Scott and his workforce design and produce small batches of about a dozen different chocolates and brittles sold at regional retailers and on their website. The entire crew was absolutely wonderful when we visited; everyone stopped working to pose for a quick pic. Thanks to Scott and crew for filling us with chocolate goodness and making our morning extra special.
