Ingredients: 4 large flour tortillas. 1 cup hummus. 2 cups mixed salad greens. 1 large tomato, thinly sliced. 1 cucumber, thinly sliced. 1 bell pepper, thinly sliced. 1/2 red onion, thinly sliced. 1/4 cup crumbled feta cheese optional. Salt and pepper to taste.
Instructions: Spread 1/4 cup of hummus evenly over each tortilla. Layer mixed salad greens, tomato slices, cucumber slices, bell pepper slices, and red onion slices evenly over the hummus. Sprinkle with crumbled feta cheese if desired. Season with salt and pepper to taste. Roll up the tortillas tightly, tucking in the sides as you go. Slice each wrap in half diagonally and serve.
