Patrick McGinley there are 12 apple trees in our garden, each a different variety. this year we managed to press around 200 liters of juice, some of which has been drunk, some pasteurised and bottled, some taken away by the friends who helped us with the harvest; but the rest has been prepared for fermenting as wine and cider, and now sits in the small warm corridor next to our bedroom (along with 40 liters of gooseberry wine, 10 liters of mead, and 5 liters of currant wine). as of yesterday (the day of recording), all the fermenting jugs and jars are going strong and activating their airlocks, creating an enticing fizzing and bubbling symphony in the small space. on aporee
