If money were no longer an issue for me, I would quit my job, find a cute little witchy house to settle down in, go back to school, help support all of the people I care about, travel wherever and whenever I wanted, donate to organizations and charities I believe in, etc. I would just want to live my life to the absolute fullest while also keeping it simple, and helping those I feel need and/or deserve it.
