Ingredients: 1 cup all-purpose flour. 1/2 cup cocoa powder. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon peppermint extract. 1/2 teaspoon green food coloring optional. 1/2 cup powdered sugar, for rolling.
Instructions: Preheat the oven to 350F 175C. Line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, followed by the peppermint extract and green food coloring if using. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Chill the cookie dough in the refrigerator for about 30 minutes to make it easier to handle. Place the powdered sugar in a small bowl. Scoop about a tablespoon of cookie dough and roll it into a ball. Roll the ball in the powdered sugar until fully coated. Place the coated dough ball on the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the cookies are set around the edges but still slightly soft in the center.
