Ingredients: 2/3 cup cold water. 3 envelopes unflavored gelatin. 2 cups granulated sugar. 2/3 cup light corn syrup. 1/4 teaspoon salt. 2 teaspoons peppermint extract. Red food coloring optional. Powdered sugar, for dusting.
Instructions: Gelatin and 1/3 cup cold water should be combined in a mixing bowl. Give it ten minutes to soften. Granulated sugar, 1/3 cup cold water, corn syrup, and salt should all be combined in a saucepan. Stirring constantly, cook over medium heat until sugar dissolves. Remove the sugar mixture from the heat source as soon as the candy thermometer registers 240F 115C. Slowly pour the hot sugar syrup into the softened gelatin using a low-speed electric mixer. Once the mixture is thick and fluffy, increase the mixer speed to high and beat for 10 to 12 minutes. Beat in peppermint extract and a few drops red food coloring, if using, until thoroughly blended. Dust a 9x9-inch baking pan with powdered sugar after greasing it. Evenly distribute the marshmallow mixture after pouring it into the pan. To set, leave it for four to six hours or overnight and dust the top with more powdered sugar. Once the marshmallows are set, cut them into squares using a sharp knife that has been dusted with powdered sugar. To keep them from sticking, dust the cut edges with extra powdered sugar.
