Late breakfast for me. Yes, I’m eating pho for breakfast! If you’re sitting there and wondering “what is pho,” it’s a delicate and delicious Vietnamese noodle soup, made from beef bones, ginger, onions and lots of aromatic spices. It’s nothing short of soup perfection. The way all the spices and flavors from star anise, cardamom, fennel seeds and cinnamon come together, is like nothing you’ve ever tasted! There’s more than one way to create “pho.” When you eat pho as much as I do, you can taste the differences from the various restaurants that serve this fantastic noodle soup. Not every cook prepares their broth with the same ingredients and step by step process. I’ve ate pho all around California, and #PhoNgon is definitely one of my favorites. This was truly a memorable experience. Not to get off-topic, but this came to mind in regards to pho noodle soup variations: Think about chicken soup, or gumbo. I’m sure we’ve all seen or had quite a few variations of these wonderful soups/stews. Not everybody makes it the same. With chicken soup, many people “freestyle” in the kitchen; adding ingredients and tasting as they go. Some might stick to a basic chicken stock egg noodle soup with carrots and celery, while others throw in everything that’s sitting in the vegetable draw of their fridge (that’s me). My grandmother and grandfather were from the Deep South. They each cooked gumbo differently, along with a wide array of other dishes.
