Ingredients
1 red onion, thinly sliced
200g peeled green prawns, deveined
200g skinless sashimi-grade kingfish fillets (see note), pin-boned, cut into 1cm pieces
1 garlic clove, crushed
1 long green chilli, seeds removed, finely chopped
2 tbs finely chopped coriander
1 cup (250ml) lime juice (from about 7 limes), plus wedges to serve
2 tbs extra virgin olive oil
Rye bread croutons, to serve

Delicious Prawn Curry from Indian Subcontinent
This thick and spicy mud curry will satisfy you completely. It is best eaten with steamed basmati rice, paul sambol (Sri Lankan coconut sauce) and a few pieces of Sri Lankan style coconut stew.
For the curry powder, place the raw rice in a small, dry pan and cook over medium heat until golden brown and transfer to a spice grinder or mortar. Add all other ingredients and make a powder.
Place the peeled prawns in a bowl, sprinkle with a little salt and curry powder, mix and set aside. Heat the coconut oil in a saucepan or heavy-bottomed pan over medium heat. Add the shrimp heads and cook until browned on both sides, about 7 minutes.
Add the onion to the pan and fry until translucent. Add the curry leaves, garlic and ginger and cook until fragrant. Add chili powder, turmeric and remaining Sri Lankan curry powder and mix everything. Cook until fragrant, taking care not to burn the herbs. Add coconut milk and good salt and bring to a boil. Reduce heat, cover and simmer for 10 minutes or until oil begins to separate. Add 250ml (1 cup) water, add more if you want a thinner curry, and simmer for a further 10 minutes, uncovered.
Add lemon juice and sugar and season to taste. In a large, heavy-bottomed pan, heat the coconut oil over high heat. Add the shrimp and cook for 1-2 minutes on each side or until cooked through. Before serving, garnish with curry sauce including heads, prawns and fried curry leaves. It is served with fried rice on the side.
