But at the end after Mario saves her, she says "Listen, everybody, let's bake a delicious cake... for Mario..."

So.

Why do you think she wants to bake a cake at the end even though she said she'd already baked one earlier?

The first one went bad because the game took so long

Bowser (and/or his troops) ate the first one

The first cake was a lie; just an excuse to see him

She decided Mario deserved one more cake just for himself

Writing mistake - the devs forgot there already was a cake
