Ingredients: 1 cup pumpkin puree. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1/4 cup vegetable oil. 2 eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon allspice. 1/4 teaspoon salt. 1 cup chopped walnuts.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, allspice, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the chopped walnuts. Divide the dough in half and shape each half into a log on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the logs are firm to the touch. Remove from the oven and let the logs cool for 10 minutes. Reduce the oven temperature to 325F 160C. Using a serrated knife, slice the logs into 1/2-inch thick biscotti. Place the biscotti cut-side down on the baking sheet and bake for an additional 15-20 minutes, turning them over halfway through for even browning. Once the biscotti are golden and crisp, remove from the oven and let them cool completely on a wire rack. Enjoy the pumpkin walnut biscotti with your favorite hot beverage!
