Slatki kruh od batata i pekmeza od šljiva

Ovo dizano tijesto od batata pravo je otkriće. Fino je i aromatično, mekano i podatno. Jako lijepo čuva boju, a nakon početnog uspjeha sigurna sam da ću ga isprobati sa svim vrstama batata i razim džemovima i pekmezima.

Sastojici:

310 g brašna

½ vrećice instant kvasca

1 žlica ulja

1 žlica javorovog sirupa

Prstohvat soli

1 žličica arome vanilije

Korica polovice limuna

310 g slatkog krumpira kuhanog na pari

Pekmez po vašem izboru

Veći slatki krumpir ili par manjih ogulite i narežite na ploške. Parite 15 minuta na jakoj vatri ili dok batat nije potpuno mekan. Vilicom usitnite u pire.

U brašno umiješajte žlicu ulja, javorovog sirupa, sol, limun, vaniliju i kvasac. Kada su sastojci dobro promiješani dodajte 310 g mlakog pirea od ljubičastog batata i miješate dok se svi suhi sastojci nisu upili. Prebacite na čistu radnu površinu i mijesite 10 minuta dok tijesto nije postalo glatko. Ako vam se tijesto kida dodajte još žličicu po žličicu vode. Premažite uljem i ostavite da se diže, u poklopljenoj posudi, na toplom. Nakon 1 i pol sat tijesto bi trebalo udvostučiti veličinu. Razvaljajte ga u veliki krug, debljine pola centimetra i površinu premažite džemom. Narežite na kockice, svaku zarolajte i slažite u nauljenu vatostalnu staklenu posudu. Prekrijte i ostavite da se diže još pola sata.

Pecite u pećnici zagrijanoj na 180°C 35 minuta.
