Cheesy alfredo air-fried chicken, garlic bread
INGREDIENTS FOR CHICKEN MARINATION: •250g Boneless chicken •1 tsp Salt •1/2 tsp lemon •1 tbsp oil •3/4 tsp chopped garlic •1 tsp Cajun spice •1 tsp Paprika •1/2 tsp Black pepper •1 tsp oregano •1 tsp tomato paste
FOR ALFREDO SAUCE: •1-2 tsp olive oil •2 tsp chopped garlic •1 cup Cream (adjust according to thickness) •spices: 1/2 tsp paprika, 1/2 tsp Cajun spice, 1/2 tsp Italian seasoning, 1 tsp black pepper powder •1/2 cup grated Parmesan •40ml water (adjust according to thickness) •1/2 tsp salt ( always add salt in the last cus Parmesan is salty already)
FOR GARLIC BUTTER COMPOUND: •2 tbsp Garlic •50g soft Butter •1/4 tsp salt and 1/4 tsp black pepper •1 tbsp freshly chopped parsley To assemble: •One loaf of bread •Mozzarella cheese
INSTRUCTIONS:
•Marinate the Chicken by adding lemon juice, salt, oil, chopped garlic, Cajun spice paprika, oregano black pepper and tomato paste to the chicken. Mix well, cover, and rest for at least 1 hour (longer = more flavour).
•Place a pan on medium heat and add olive oil. Add chopped garlic and cook for about 30–60 seconds, just until fragrant (don’t let it brown). Pour in the cream and stir well. Let it gently simmer for 2–3 minutes.
•Add paprika, Cajun spice, Italian seasoning, and black pepper. Mix and simmer another 2 minutes, stirring occasionally. Lower the heat and stir in grated Parmesan slowly until fully melted and creamy. Taste first, then add salt (since Parmesan is already salty).
•Finish it by adding some water and Simmer for 1–2 more minutes until the sauce thickens. Turn off heat.
•Place the marinated chicken in the air fryer. Air fry at 195–200°C for 10 minutes until lightly charred and cooked through.
•Blend the garlic with butter, salt, black pepper, and fresh parsley to form a smooth garlic butter compound.
•Assemble the Garlic Bread. Slice the bread loaf. Spread a generous layer of garlic butter. Top with alfredo sauce and add air-fried chicken and Finish with lots of mozzarella cheese.
•Bake at 165–170°C for 20 minutes until the cheese is melted and bubbly and the bread is golden. ✨ Slice, serve hot, and enjoy that cheesy, Alfredo garlic bread.
Baked Spinach Mushroom Quesadillas😋
Ingredients: 👇
4 tortillas (8 inch)
Olive oil (optional, enough to lightly coat the tortillas)
1 cup shredded mozzarella
1 cup shredded cheddar
3 cups roughly chopped spinach
8 ounces sliced mushrooms
Directions: 👇
Preheat the oven to 400°F (200°C).
Drain the mushrooms and actually I found them better if you warm them up in a pan beforehand. Fresh mushrooms are even better prepared in a little butter and a little Worcestershire sauce.
Lightly brush one side of each tortilla with the olive oil(optional) and place on a baking sheet, oiled side down.
Distribute about half of each of the cheeses over half of each of the tortillas. Then layer the spinach, mushrooms, and the rest of the cheeses, and fold the other tortilla half over top, you can garnish by some mushrooms and cheese.
Bake the tortillas for about 6 minutes, then flip them each over and bake for another 6-7 minutes, until the cheese is melted and the outside of the tortillas are a golden brown.
