This chimichurri sauce made from superfoods is full of fresh flavors and only takes 5 minutes to make in the blender. It goes well with grilled vegetables, tofu, or your other favorite plant-based proteins.
Ingredients: 1 cup fresh parsley leaves. 1/4 cup fresh cilantro leaves. 2 tablespoons fresh oregano leaves. 3 cloves garlic, minced. 1 shallot, finely chopped. 1/4 cup red wine vinegar. 1/2 cup extra-virgin olive oil. 1 tablespoon chia seeds. 1 tablespoon hemp seeds. Salt and pepper, to taste.
Instructions: Put oregano, garlic, shallot, parsley, cilantro, and red wine vinegar in a blender. Blend the herbs until they are very small pieces. Slowly pour in the olive oil while the blender is on low speed until everything is well mixed. Add chia seeds, hemp seeds, salt, and pepper to the bowl after moving the mixture there. The flavors will blend better if you let the sauce sit for a while. You can use it right away or put it in the fridge in an airtight container for up to a week.
