So yesterday I was introduced to the wonderful thing called Quinoa, which is chock full of fiber, protein and iron. --- a grain-like crop grown primarily for its edible seeds.
I had no idea what to do with it, but after I was finished experimenting, it turned out pretty good!
Here is what I used:
1 Cup of Quinoa
2 Cups Mushroom stock
1 Clove of garlic
1/4 Cup of pistachios
1/4 Cup of Dried Cranberries
For the Asparagus, I just pan fried it with olive oil, yellow onion and vegetable stock powder that you can get from local Asian market. I then drizzled a bit of balsamic vinegar over the asparagus and added a squeeze of lemon juice.
That is it! It turned out surprisingly good.
