These Soft Oatmeal Raisin Cookies are a classic treat that combines the warmth of cinnamon, the chewiness of oats, and the sweetness of raisins in every delightful bite.
Ingredients: 1 cup unsalted butter, softened. 1 cup packed brown sugar. 1/2 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1 teaspoon ground cinnamon. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 3 cups old-fashioned oats. 1 1/2 cups raisins.
Instructions: Preheat the oven to 350F 175C. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and creamy. Beat in the eggs, one at a time, and then stir in the vanilla extract. In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the oats and raisins until evenly distributed throughout the cookie dough. Drop spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden but the centers still appear slightly undercooked. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
