What’s for Dinner Tonight? Roasted Raspberry Chipotle Pork Tenderloin
Ingredients
1/c olive oil
2 teaspoons minced fresh rosemary leaves
1 tablespoon minced garlic
1 teaspoon sea salt
1 1/2 teaspoons freshly ground black pepper
2 1-pound pork tenderloins
1 3/4 cup raspberry preserves
1/2-1 finely chopped chipotle in adobo (depending on how hot you want it)
Preparation
Heat oven to 425.
Whisk together oil, rosemary, garlic, salt, and pepper.
Place tenderloins on a baking sheet and rub generously with the seasoned oil. Roast, uncovered, for about 20-25 minutes. Remove the meat from the oven and set aside covered in foil for about 10 minutes to rest.
Meanwhile, stir together the raspberry preserves and chipotle chili over medium heat in a saucepan. Slice the meat and drizzle with sauce.
This entree would go well with any roasted veggie, or in my case, I think I’ll do roasted potatoes. White creamer potatoes, halved, drizzled with olive oil and seasoned with salt and pepper.
