My miso ramen broth:
Dice a couple slices of onion and a knuckle’s worth of ginger. Heat olive oil in pot and add aromatics and garlic, sauté until, well, aromatic. Add a dash of soy sauce, 1.5 tbsp of miso, tsp of sugar and quite a bit of mirin. Mix together to form a paste
Shred a handful of oyster mushrooms, quickly sauté in oil, add 2 cups of water and simmer
