Onion Caramelized Hummus is a tasty and distinctive take on classic hummus. This traditional dip takes on a rich and savory dimension from the sweetness of caramelized onions and the richness of roasted garlic. Ideal for entertaining or as a tasty snack!
Ingredients: 2 cups cooked chickpeas. 1/4 cup tahini. 1/4 cup olive oil. 2 large onions, thinly sliced. 2 cloves garlic, minced. 1/4 cup lemon juice. 1 teaspoon cumin powder. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons water optional, for desired consistency.
Instructions: Put 2 tablespoons of olive oil in a pan and heat it over medium-low heat. When you add the sliced onions, cook them while stirring them every now and then until they turn caramelized and golden brown. The time it takes could be 20 to 25 minutes. When the onions start to turn brown, add the garlic and cook for one to two more minutes, until the garlic smells good. The cooked chickpeas, tahini, lemon juice, cumin powder, paprika, and the caramelized onion and garlic should all be put into a food processor. Mix until it's creamy and smooth. If you need to, slowly add water until the hummus has the consistency you want. Mix in salt and pepper to suit your taste. If you need to, change the seasonings. Put the hummus with caramelized onions in a bowl to serve. Top with a drizzle of olive oil, some of the caramelized onions you made earlier, and paprika. You can eat it with crackers, fresh vegetables, or pita bread. Have fun!
