This herb-roasted chicken is seasoned with a tasty mix of thyme, rosemary, sage, and garlic. The chicken is juicy and the herbs smell great. This dish is great for any occasion.
Ingredients: 1 whole chicken about 4-5 lbs. 2 tablespoons olive oil. 2 teaspoons salt. 1 teaspoon black pepper. 2 teaspoons dried thyme. 2 teaspoons dried rosemary. 2 teaspoons dried sage. 4 cloves garlic, minced.
Instructions: Preheat oven to 425F 220C. In a small bowl, mix together olive oil, salt, pepper, thyme, rosemary, sage, and minced garlic to create a herb rub. Rinse the chicken inside and out, then pat dry with paper towels. Rub the herb mixture all over the chicken, making sure to coat it evenly. Place the chicken in a roasting pan or baking dish, breast side up. Roast in the preheated oven for about 1 hour and 15 minutes, or until the juices run clear and the internal temperature reaches 165F 75C in the thickest part of the thigh. Once cooked, remove from the oven and let it rest for 10-15 minutes before carving. Serve the roasted chicken with your favorite side dishes.
