This recipe was cut in half.
The measurements that I used:
2.5 cups of unbleached, all purpose flour
1 tablespoon of quick-rise yeast*
1 teaspoon of granulated sugar
half teaspoon of table salt
1 cup of hot water
2 tablespoons of olive oil*
1) Put 2 cups of the flour, yeast, sugar and salt into large bowl.
2) Pour in hot water and oil and mix until combined- it will be sticky.
3) Add the remaining flour in increments until dough is no longer sticky.
4) Knead for about 5 minutes until dough is elastic and smooth.
5) Place dough back into bowl and cover with a damp teatowel and let it rise until double its size- about 1/2 hour.
6) Punch it down and shape the dough into a ball.*
7) Place in glass casserole dish and let rise for a few minutes.*
8) Bake at 400F for 40 minutes.
9) Wrap the bread with a damp towel to soften the crust.

This bread makes it taste like I’m an expert bread maker when really this is only the second loaf of bread I’ve ever made. So light n’ fluffy and you could use it for anything.
