Recipe: ‘Sakura Creme’ Cheesecake

Ingredients
Crust:
15 Graham crackers, crushed
1 tablespoon melted butter
1 tablespoon Sakura Nectar **
Sakura Nectar Recipe
Cake:
4 (8oz) packages cream cheese, room temp.
1 & 1/4 cup white sugar
3/4 cup milk
4 eggs
1/2 cup sour cream
1/4 cup sakura nectar
1 teaspoon vanilla
10 salt preserved sakura blossoms, rinsed well, stems removed completely
1/4 cup flour
Topping:
1 Cup heavy whipping cream
4 teaspoons Sakura Nectar
1 teaspoon unflavored gelatin
15 reserved, rinsed blossoms, sugared
Sakura Nectar for drizzle
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter and 1 tablespoon sakura nectar. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, 1/4 cup sakura nectar, 10 prepared blossoms, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. LIES.
Chill in refrigerator.
Decorate with Sakura Whipped topping and reserved, sugared blossoms.
Sakura Whipped Topping
1 teaspoon unflavored gelatin
4 teaspoons Sakura Nectar
1 cup cold heavy whipping cream
1/2 teaspoon vanilla extract
1. Put the Sakura Nectar in a small saucepan. Sprinkle the gelatin over the surface of the Nectar and let stand for 5 minutes (do not stir). Place the saucepan over low heat and stir constantly with a wooden spoon just until the gelatin dissolves. Remove the saucepan from the heat and cool to room temperature.
2. In a mixing bowl, combine the whipping cream, and vanilla and beat until slightly thickened. Then, while beating slowly, gradually pour the gelatin into the whipped cream mixture. Then whip the mixture at high speed until stiff.

Dip reserved blossoms in sugar and put on cake.
Drizzle top with Sakura Nectar when serving.
