Black-eyed peas are more than a New Year’s good-luck charm or a Southern comfort food; they can be used to make this great Spicy Black-Eyed Pea Salad you’ll crave all year long.
This salad.. has everything..
Carbs, protein, the whole gang. And it tastes amazing, and it’s weightloss friendly. It’s a big one but it will make you feel satisfied, you can also split it in two portions. Of course one can make it vegan by taking out the animal products and eventually replace them.
For one big plate (or 2 smaller portions), you’ll need :
• red quinoa but you can use normal one ~ 60g
• a whole tomato ~ 125g
• a small onion ~ 40g (I added more cause I love onions)
• arugula salad ~ 100g
• smoked salmon ~ 35g (vegan? replace it with avocado 🥑 if you want)
• fresh goat cheese ~ 20g
• olive oil ~ 5g ~ 1tbs
• a lil bit of salt
How to :
• rinse the quinoa and cook it
• chop the onion, tomato and salmon in small pieces and put it in a bowl with the salad, goat cheese, quinoa, oil and salt
• mix everything and enjoy 🥰
