A delicious and quick Asian-inspired stir-fry with tender salmon, rice noodles, and a flavorful sauce. Perfect for a satisfying weeknight dinner.
Ingredients: 2 salmon fillets. 200g rice noodles. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 tablespoon hoisin sauce. 1 tablespoon sesame oil. 1 teaspoon grated ginger. 2 cloves garlic, minced. 1 red bell pepper, thinly sliced. 1 cup broccoli florets. 1 carrot, julienned. 2 green onions, chopped. 1 tablespoon vegetable oil. Salt and pepper to taste. Crushed red pepper flakes optional, for spice.
Instructions: Prepare the rice noodles as directed on the package, then drain and set aside. Salmon fillets should be seasoned with salt, pepper, and a little sesame oil. In a large skillet or wok, heat the vegetable oil over medium-high heat. When the salmon fillets flake easily with a fork, add them and cook for 34 minutes on each side. Take out of the pan and place aside. Add the garlic and ginger to the same pan and saut for one minute, or until fragrant. Add carrot, broccoli, and red bell pepper. Stir-fry for three to four minutes, or until they start to get tender. Add the cooked rice noodles, hoisin sauce, oyster sauce, and soy sauce. Toss to mix, then fully cook. Add the cooked salmon to the pan after flaking it into bite-sized pieces. Simmer the salmon for a further two to three minutes while stirring gently to mix it in with the noodles and vegetables. For added heat, top with chopped green onions and optional red pepper flakes. Enjoy your Asian Salmon and Noodle Stir-Fry hot out of the pan!
