Ingredients: 2 cups all-purpose flour. 1/4 cup vegetable oil. 1/2 teaspoon salt. Water as needed. 2 cups boiled and mashed potatoes. 1 cup green peas. 2 tablespoons oil. 1 teaspoon cumin seeds. 1 teaspoon ginger-garlic paste. 1/2 cup chopped onions. 1/2 cup chopped green bell pepper. 1/2 teaspoon turmeric powder. 1 teaspoon coriander powder. 1 teaspoon garam masala. 1/2 teaspoon red chili powder. Salt to taste. 2 tablespoons chopped fresh cilantro. Oil for deep frying.
Instructions: In a bowl, combine flour, 1/4 cup vegetable oil, and 1/2 teaspoon salt. Gradually add water and knead to make a firm dough. Cover and set aside for 30 minutes. In a pan, heat 2 tablespoons of oil and add cumin seeds. Add ginger-garlic paste and saut until fragrant. Add chopped onions and green bell pepper. Saut until they turn soft. Add turmeric powder, coriander powder, garam masala, red chili powder, and salt. Mix well. Add mashed potatoes and green peas. Cook for a few minutes until the mixture is dry. Stir in chopped cilantro and remove from heat. Divide the dough into small portions and roll each portion into a thin oval shape. Cut each oval in half to form two semi-circles. Fold each semi-circle into a cone shape, sealing the edges with water. Fill each cone with the potato-pea mixture and seal the open edge to form a triangle. Heat oil in a deep pan for frying. Deep fry the samosas until they turn golden brown and crispy. Remove and drain on paper towels. Serve hot with chutney or sauce.
