Perfect match with home-made Japanese udon noodle dish of mushrooms, red cabbage, garlic, chilli and smoked salmon. Few herbs in there too, plus sesame oil—of course. Wine's balance of fruit, acid and mouthfeel cooled and refreshed the palate after each chopsticked mouthful.
