‘Sarson ka saag’-Tender Mustard greens cooked along w other greens, turnip, corn flour and butter! A quintessential Punjabi Winter delicacy! #sarsonkasaag #mustardgreens #spinach #northindianfood #punjabifood Sarson Ka Saag recipe: 1 bunch Sarson (Mustard greens)-chopped, washed & drained 1 bunch Bhatua (Lamb's quarters/Pigweed), Chopped, washed & drained 2 cups Spinach- Chopped, washed & drained 1 cup Methi/Fenugreek leaves (optional) 1 small turnip- sliced thin 3 baby red radish- sliced thin 1 Onion-Finely chopped 10 cloves of garlic (keep 5 aside for garnish later) 1 inch ginger (peeled & chopped fine) 2 thai chilies- Finely chopped Salt to taste 1/4th tsp tumeric 1/2 tsp Paprika or cayenne 1 heaped Tblsp - Yellow Corn flour or Yellow masa 2 Tblsp- Unsalted butter 2 Tbsp- Ghee/Brown butter 1 tsp cumin seeds Method: In a large sauce pan add the 2 cups water and add all the chopped radish, turnip, little garlic, ginger, 1/2 of the chopped green chilli, and the chopped greens. Cooked until the turnip and radish had cooked well and the greens have wilted and soft. Use a wooden masher to mash them all together into a creamy consistency or add everything including the cooked water, to a food processor and pulse it until everything comes together. Do not grind it smooth. Keep it aside. In a medium size saute pan, add the ghee, cumin seeds. Once it starts to brown add the rest of the chopped garlic, ginger and onions and salt. Once the onions have start to become brown, add the corn flour, saute it for a minute, reduce the heat and add the paprika/cayenne. Saute for few seconds and add the ground greens, mix it. Check for seaoning and adjust if need be. Cook for 5-7 minutes.
