Join us this Sunday, 25th of May, in Tenerife, in the home of +Michael Mason (of +Plus My Reach) & Sandra as they show us how to make empanadas! As usual, it'll be educational & full of fun! You don't want to miss this Spanish edition! RECIPE Filling 500 gm of minced beef 1 large onion 1/2 green pepper 1/2 red pepper 1 clove of garlic Grated parmesan cheese 2 hard boiled eggs Green olives Salt, Pepper Sunflower oil Pastry Method Dice the onion into small pieces, the pepper & the garlic. Cook with a little oil. When ready add the minced beef and cook through. Add salt & pepper. When cooked add the cheese, the boiled eggs (also finely diced) and the olives (chopped). Mix everything together. Wrap the meat in the pastry. Close by hand, pinching the edges or with the end of a spoon. Place in hot oil and fry. *************************************************** The Dough (recipe from Azlin Bloor) 500g plain flour, cool but not cold, pliable consistency 250g butter pinch salt 150-200ml cold water 1. Place the flour into a roomy bowl and add the butter in little cubes. 2. Using a knife, cut the butter into the flour. This means, mix the butter into the flour by using a cutting motion with the knife. 3. When you've mixed as much as you can, use your fingertips and mix but without kneading.. 4. Add half of the water, still bringing it all together with your finger tips, until you have a pliable dough. Add water as necessary. 5. Flatten the dough into a disc, place in the fridge for 10 minutes before rolling out and cutting. PS: There are as many variations of empanada dough as there are fillings. This is the recipe I've been using since I was a kid, essentially my granny's. Another favourite of mine for the dough is flaky pastry, where I just increase the amount of butter used & reduce the water.
