A quick and delicious sesame chicken noodle stir-fry that's fully customizable with your favorite vegetables and noodles. This dish is perfect for a busy weeknight dinner.
Ingredients: 8 oz boneless chicken breast, thinly sliced. 8 oz noodles your choice, e.g., udon, rice noodles. 2 tbsp sesame oil. 1/4 cup soy sauce. 2 tbsp hoisin sauce. 2 cloves garlic, minced. 1 inch ginger, grated. 1 cup broccoli florets. 1 cup bell peppers, thinly sliced. 1 cup snap peas, trimmed. 2 green onions, chopped. 2 tbsp sesame seeds. Salt and pepper to taste.
Instructions: Cook the noodles according to package instructions. Drain and set aside. In a bowl, combine soy sauce, hoisin sauce, garlic, and ginger. Marinate the chicken slices in this mixture for 10 minutes. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove from the skillet and set aside. In the same skillet, add the remaining 1 tablespoon of sesame oil. Stir-fry the broccoli, bell peppers, and snap peas for 4-5 minutes until they start to become tender. Return the cooked chicken to the skillet, along with the cooked noodles. Stir to combine. Season with salt and pepper to taste, and toss in half of the chopped green onions. Serve the sesame chicken noodle stir-fry hot, garnished with sesame seeds and the remaining green onions.
