These shrimp taco bites are perfect for parties or as a tasty appetizer. They are easy to make and bursting with flavor, combining seasoned shrimp with fresh toppings and crispy mini taco shells.
Ingredients: 24 large shrimp, peeled and deveined. 1 tablespoon olive oil. 1 teaspoon chili powder. 1 teaspoon garlic powder. 1/2 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 24 mini taco shells. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1 avocado, diced. 1 lime, cut into wedges. Sour cream optional. Hot sauce optional.
Instructions: Preheat the oven to 375F 190C. In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, cumin, paprika, salt, and pepper until evenly coated. Place the seasoned shrimp on a baking sheet and bake for 8-10 minutes, or until cooked through. While the shrimp are baking, heat the mini taco shells according to package instructions. Once the shrimp are done, assemble the taco bites by placing a shrimp in each mini taco shell. Top each taco with shredded lettuce, diced tomatoes, red onion, cilantro, and diced avocado. Serve the shrimp taco bites with lime wedges, sour cream, and hot sauce on the side, if desired.

Once the shrimp are cooked, assemble the taco bites by placing a spoonful of the topping mixture into each mini tortilla cup or lettuce leaf. Top each taco bite with a roasted shrimp.
