Yes, but it would require either training or talent. Literally any question of mimic abilities boil down to training or talent. Some techniques require 1000+ years of practice, like precise biological transmutation, while others are piss easy like size-shifting homogenous, inert materials, or basic, low-quality shapeshifting.
This sounds magical, but just think of it like how hard it is to render certain objects in a 3D engine, or draw at certain levels of detail. That's why a lot of them are just toys, or animated sculptures made of glass and stone. A large body is a lot of physical matter to render and account for, so a mimic needs to be acclimated for constructing things at that scale.
So to answer your question, the answer is Yes, but you need to be able to practice moving around at that scale for a very long time, and most mimics who get that powerful get wiped out by angels.
To clarify, mimics are basically just 3D printers. One could painstakingly craft a kaiju body... and then not be able to move it at all due to limited energy reserves. A mimic needs to store and stabilize a lot of energy to make sure they can even move at that size, and then have the dexterity to do it properly. Else they wind up just moving like someone on stilts, or breaking apart in attempting to curl a finger.
Some kaiju mimics "cheat" this by being largely hollow and made out of a lightweight but durable structure, decreasing the amount of matter that needs to be maintained and manipulated. This works, but it also means they're easy to beat the shit out of by smaller mimics. Getting big makes you a really big target for angels, mimics that just don't like you, human military, etc. Angels gun down mimics they deem as too dangerous to humanity, so very few ever get to practice becoming that big in the first place. In this setting, being small but powerful is usually the best option. Not unlike being a fighting game character with a small hitbox and great frame data
Hex, my anime girl dog action figure, can actually shift to Kaiju sizes because she's way older and stronger than she looks. But she rarely does this to keep a low profile. Hex is not an angel but a "nephilim" mimic, a powerful machine built by angels for simple tasks, like clearing a wasteland after a war, reshaping the earth for new habitats, moving large amounts of cargo, etc. In other words, she was made as a glorified heavy machinery construction vehicle. She envied angels for their reality warping powers and authority over the world, but because angels gain this power through ego death, and Hex is VERY id- and ego-driven, she could never attain it.
Her arc is figuring out how to maintain a human size, since she's only practiced being toy-sized and kaiju sized. This was inspired by my own struggles with emotional regulation and socializing as someone born with a brain that doesn't work right and didn't feel like a human until I was like 10 years old. She can shift to human size but can't "lock it in" comfortably, her body crumbling or shriveling or becoming disfigured as she fails to move properly. Best analogy I typically give is that standing at a human height for her is like standing on one foot. You can do it for a bit, but eventually you lose your balance if you don't practice. This goes back to what I said about energy; she has the energy reserves of a Kaiju in a smaller body, and has to expend that energy extremely carefully to not just rip apart her own limbs when she tries to move.

How permeable is Angie’s jelly bits? Like can stuff be stored in there?
Oh yes! I’ve talked about this where it’s kinda like oobleck, where if you move quickly is fairly solid, but if you’re slow it’s pretty easy to sink into.
She could technically store things in there if she really wanted to, though it’s not very convenient to have items coated in slime jelly once she removes them. So more conventional transportation is usually optimal.
However, her jelly actually has healing properties so, you could in theory stick your hand in there if you had a cut or something and wait for her jelly to heal you. Better ask before you do that, though.
