This simple skillet lasagna recipe has all the flavors of regular lasagna without the work of layering. This dish is hearty and comforting, and it only takes one pan to make, which is great for busy weeknights.
Ingredients: 1 lb ground beef. 1 onion, finely chopped. 3 cloves garlic, minced. 1 tsp dried oregano. 1 tsp dried basil. 1/2 tsp salt. 1/4 tsp black pepper. 1 can 14.5 oz diced tomatoes. 1 can 8 oz tomato sauce. 2 cups water. 10 lasagna noodles, broken into pieces. 2 cups shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. Fresh parsley, chopped for garnish.
Instructions: Put ground beef, onion, and garlic in a large skillet. Cook over medium heat until the beef is browned and the onion is soft. Add salt, black pepper, oregano, and basil and mix well. Lasagna noodles, tomato sauce, and water should all be added. Mix well. Bring the mix to a boil. Lower the heat, cover, and let it simmer for about 20 minutes, stirring every now and then, until the noodles are soft. Take the pan off the heat. Add some mozzarella and Parmesan cheese on top. Put the lid on top and wait about 5 minutes, or until the cheese melts. Add chopped parsley as a garnish before serving.
