Ingredients: 1 lb baby potatoes, halved. 3 large carrots, peeled and sliced. 1 large onion, chopped. 2 bell peppers, diced. 2 zucchinis, sliced. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: Put potatoes, carrots, onion, bell peppers, zucchini, and garlic in a slow cooker. Rosemary and thyme that have been dried, salt, pepper, and olive oil should be added. Mix well. Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the vegetables are soft. If you can, stir it every so often. As a main dish or a side dish, serve hot. Have fun!
