The little barrel smoker runs hot! It got up over 300f and I only want it at 250f -275f. I closed some of the vents part way and the temp seems to be going down to a more steady 275f now. I shovelled all the coals to the left under the water. I'll only use 2/3rds of the coal I used this time, next time. I'm also using larger chunks of hickory which I really prefer to the chips as the larger chunk smolders away for a longer period of time whereas the chips seem to burn up fairly quickly. I'm having a good time figuring out this new smoker!
