LISTEN HERE MOTHER FUCKER YOU'RE GONNA MAKE SOME MAC N CHEESE.
Things to acquire:
8 oz of dry pasta! (I use the curly macaroni noodles because they have more surface area for saucy goodness)
2 cups of cheddar cheese (I use extra sharp cause it has more bite)
12 slices of american processed cheese (I know that’s so gross impossibly redneck, but IT MAKES IT SO CREAMY)
Half a big ass can of grated Parmesan cheese
3 cups of milk
flour (I use whole wheat because its better for you but all-purpose works, too)
four and a half tablespoons of butter
half a small onion, finely chopped (optional)
one large garlic clove, rough chopped (not as optional but still optional)
dry or wet mustard
salt n peppa
Breadcrumbs or unseasoned cubed bread stuffing
MAKE THE THING:
Cook yo pasta! Put it in the dish that you’re gonna cook everything in when it’s done and set it aside. Make sure you rinse it with cold water to stop the cooking proccess so that it’ll still be al dente when you finish everything.
(Medium-high heat) Melt that butta! If you’re using the onion and garlic, now is the time to put them in. Put the onions in before the garlic until they’re translucent, then the garlic so it doesn’t burn.
Now you’re gonna make a roux! get a big ol spoon and scoop out some flour. Sprinkle it in and slowly mix it until it’s nice and thick and bubbly.
Grab that milk and pour it into the roux slowly while stirring. Let it simmer to heat all the way through. (Make sure to do both this step, and the previous step really slowly, or your sauce will be grainy and thick)
Once your roux-milk mix is all warm, start dumping in cheese. I start with the cheddar, since it melts the fastest, then the american, and then the Parmesan. Don’t add another cheese until the first is completely melted and combined into the mixture.
Once your sauce is all heated and melty and delicious, taste it. It probably needs salt, and pepper. Do that shit to your liking. I like so much pepper it’s almost toooo much pepper.
Add the wet or dry mustard. No more than a teaspoon of dry mustard, OR a tablespoon of wet mustard. Any more than that it’s gonna taste like booty. But, you can always add less, to get less of that flavor. But, it goes really well with the cheese.
Mix everything one last time. Make sure your sauce is creamy af. If it’s not, then cook it a little bit longer and stir it with a whisk. That makes it lighter and creamier.
Pour that creamy ass shit over your noodles that have been patiently waiting for their cheesy blanket of love. Make sure every last noodle gets a lil bit of love.
Bread crumbs or cubes over the top. I know it looks like they’re gonna get soggy, but they won’t trust me.
Bake for 30-45 minutes.
